I have not purchased salad dressing for many years. Many have a lot of sugar and preservatives. I have been experimenting with using leftover tahini from my Moroccan dish. Keeping the theme of creativity this month, I made up this salad dressing that is per one serving of salad. By experimenting with single serving there is less to throw out if things don’t work out. This one is a keeper.
1 tsp olive oil
1/2 tsp tahini
1/2 tsp dijon mustard
1/2 tsp apple cider vinegar
a splash of lemon juice
