Holiday Leftovers and Cranberry Crustless Pie

I had leftover pumpkin from a can.  Almost every recipe I make with canned pumpkin leaves me with a small amount of extra pumpkin puree.  I read you can blend it with yogurt.  I used my blender to add it to kefir and topped with a cereal.

I made a butternut squash cranberry and feta dish for Thanksgiving.  I had a lot of fresh cranberries leftover.  I made a the pie listed in this link.  It got good reviews from every who tried it.  It was a quick easy dish to make it for a party.  The “pie” does not rise it is more like a tart.Next time I will experiment with a gluten free flour and healthier sugar substitute.
