For a good vegetarian option with protein I modified a falafel and burger recipe and made these chickpea patties.
1 can drained chickpeas
1 clove of garlic chopped
1/2 small onion, coarsely chopped
1 tbsp parsley flakes
1/2 tsp baking powder
1/4 cup tapioca starch and 2 tbsp olive oil
Mix chickpeas, garlic, onion and parsley in food processor. Hand mix in baking powder and starch or you can use flour and add 2 tbsp olive oil. Bake at 350 degrees on parchment until brown and slightly crisp.
