Spiralizing

Have you spiralized yet?  This is a great way to get more vegetables into your meal plans.  There are all kinds of spiralizers and I got mine for under $20.  I read that zucchini is the easiest  vegetable to use to start.  It was super easy just wash, peeling is optional, choose the width of noodle you would like by looking at the blades.  I coated a pan with a little pistachio oil and added 1/2 teaspoon of minced garlic.  I twisted the zucchini into one side of the hourglass contraption and right into the pan throught the blades.  Just watch your fingers at the end or using the cap.  I used one small to medium zucchini (pictured below) and cooked in the oil and garlic for about two minutes.  The first round I added two tablespoons of water and covered the pan and simmered for two minutes.  The second round I added three tablespoons of water and covered simmered about three minutes.  I liked it cooked a little longer.  Use as any other pasta with any sauce of your choice.  With the brush provided cleaning the blades was safe and easy.
