Cinnamon the Wonder Spice

Cinnamon is a spice that is made from the inner bark of trees called Cinnamomum.

It dates back as far as Ancient Egypt. It used to be rare and valuable, and was regarded as a suitable gift for kings.  These days, cinnamon is cheap, readily available and can be used in many recipes.

Compared to other spices the antioxidant activity of  cinnamon is a winner, even outranking garlic and oregano. The scent of cinnamon boosts brain function, it reduces blood glucose concentration and enhances insulin sensitivity.

In baking I find I can use less sugar if I add more cinnamon.  So another way I get my cinnamon in when not baking is on yogurt.

IMG_2642Just mix it in to plain yogurt.  I don’t buy sweetened yogurt any more so this is great way to improve the taste.(I have also gone back to whole milk yogurt)  I also often add some chia seeds and a few spoons of an all natural cereal.
