Grilling Outside the Box

In the north here we still have a few months of good grilling weather.  Many people only think of grilling meat.  My gourmet cooking club once had a gathering where everything had to be grilled.  I have grilled vegetables and bread for years.  Pictured is my first attempt at grilling tempeh with flax seeds and my first time using an electric grill.  Tempeh is fermented soybeans from the whole bean bound into a cake form.  It originated in Indonesia and often has more protein than tofu.  Fermenting soy foods is popular in the East.  The health benefits of fermented foods are getting a lot of attention these days.  Fermented foods contain probiotics that aid in digestion.  I also grilled red peppers, zucchini, yellow squash, tomatoes, red onion and whole wheat naan bread.  All were lightly coated in olive oil, grilled, cut up and served over baby spring green lettuce.  I added oregano and lemon basil from my garden, a little parmesan cheese and purchased orange muscat champagne vinegar dressing.
